Bourbon Street Shrimp

I love easy when it come to cooking and this recipe 
takes less time than baking a frozen pizza!

Cook your choice of veggies and raw shrimp in a skillet 
until shrimp is pink and veggies are tender crisp.

While stir fry cooks, mix the following:
1/2 tsp ginger
1/4 tsp garlic powder
1/2 tsp red pepper flakes
1/4 c apple juice
1/4 c water
1/4 c soy sauce
1/4 c brown sugar
2 tbsp ketchup
 Mix well and then add 2 tbsp corn starch

Add to cooked shrimp and veggies and 
once it thickens serve alone or over rice.

Here is the big idea: Stop Starting!!! I am a self proclaimed social media junkie, so I follow and keep tabs on a lot of people because I genuinely care about them. So I can tell you how many countless friends I have seen post about their workouts, shakes, or goals --just to see crickets about the subject two weeks later!

Now, I do have a handful of very dedicated friends who are rocking their consistency and commitment to their goals, but sadly most of us START AND STOP way too often.

Lack of time?
Lack of commitment?
Lack of sustainability?

This was the problem I face most of my adult life... Starting and stopping and never fully reaching my goals. And that often leads to frustration and hopelessness!

But there is a way... Motivation.

I know you are thinking ,"Whatever, motivation never worked before either!"

The difference is how you define motivation. Most think it is just shear will-power; the ability to self-propel; a feeling of drive. 

I beg to differ.

Motivation is not a feeling, it is a series of actions taken toward a goal that then become habit and no longer requires a feeling. 

This is how you stop starting... Break down that diet, exercise, or goal plan into specific and impactful actions steps. Commit to repeatedly doing and tracking these action until they are so natural you can not imagine not doing them! 

Here is a example:
Sally wants to lose weight and has yo-yo dieted for years. She is frustrated and sick of restarting. She decides her action steps are 

Drinking 6 glasses of water a day
Tracking her food daily
Walking 45 minutes on her lunch break 
Taking Zumba twice a week

She writes her action steps in her planner and checks them off for four weeks. 

She does not always meet every step, but she reviews her checks and aims to get better each week.

After a month, Sally has lost 4 pounds, but the best part is she does not feel like she is on a "diet".  Tracking food is simple and easy, she loves the walking and Zumba is her social outlet. This is her lifestyle now, and she just flows through it-- no deprivation or pushing needed.

So whatever area you struggle with over and over, it is time to stop starting. Make a goal, break it into impactful actions, do and track those actions, and you will propel past that staring line all the way to the finish!!

Stuffed Pepper Rings

I have to brag a bit...
 I found some similar meatloaf recipes on Pinterest but I wanted to create my own,
and this recipe came out AMAZING!!

PLUS bonus points for a meal you put in the oven and walk away for almost an hour!!

Here is the Recipe:

1. Slice 3 or 4 peppers into 1 inch rings and place on cookie sheet.

2. Combine:
  • 3 lbs Ground Turkey
  • 1 can fire roasted diced tomatoes drained
  • 1 Tbsp Grill Seasoning
  • 2 Tbsp Worcestershire Sauce

3. Fill peppers with meat mixture and sprinkle with shredded cheese.

4. Baked about 45 minutes at 375 degrees and enjoy!

Banana Oat Muffins

I have been making these muffins longer than my kids have been alive, 
and now they take them for snack time at school! 

Mix dry ingredients:
2 cups Flour
1 cup Sugar
1 cup Oats
2 tsp baking powder
1tsp baking soda
1 tsp salt

Mix wet ingredients:
2 cups mashed banana
2 eggs
2 tsp vanilla

Combine the dry and wet ingredients
(if it is too dry add a bit of water).

Add in 1 cup Chocolate Chips.

Scoop into muffin pan with paper liners.

Bake a 375 degrees about 20 minutes.

Makes 24 small muffins, perfect for little hands!

Almond Joy No Bake Healthy Treats

I love it when an idea comes together! 
I wanted to create something that was a treat but that was fast and filling! 
Almond Joy No Bake treats were the solution! Tada!

Melt 1 cup Chocolate Chips in the microwave.
Add in 
1/2 Cup Coconut
1/2 Cup Bran Flakes
1/2 Sliced Almonds
Drop by 2 Tbsp on wax paper and add optional 
Garnish of coconut flakes and whole almond.
Place in fridge until hardened and enjoy!
Makes about 12.

Peanut Butter Protein Oatmeal

This is a recipe I have eaten for years and still love. 
Well, mostly because it has peanut butter!

Mix 1/2 cup oatmeal and water and cook in microwave.

Add 1/2 or full scoop of Chocolate protein 
powder of your choice.

Add in 1 Tbsp Peanut Butter.
You can mix it in or let it get all 
melty in the center (That is how I like it!)

Roasted Curry Cauliflower and Chicken

This is a super low stress and tasty dinner
Mix 1 head of cauliflower, 
2lbs of diced pork, 
2 Tbsp Olive olive 
and 3 Tbsp Curry Seasoning blend.

If need be, you can make your own spice blend with 
2 Tbsp Curry Powder, 
1 tsp ground red pepper, 
1/2 tsp cumin, 
1/2 tsp cinnamon, 
1/2 tsp black pepper, 
1/2 tsp numeric,  
1/2 tsp basil,  
and 1/4 tsp coriander 

Roast at 380 degrees for 45 min to an hour depending on preference

Lazy Chicken

To be honest, sometimes I like making intricate dinners and
other times I just want to put dinner in the oven and walk away.
This recipe for Lazy Chicken is that easy! 

Cut your chicken breast into thirds so it will cook faster. 
Place in a ziplock bag with Dale's Marinade  
(yum) for 10 minutes. It marinades really fast!
Sprinkle with Steak Seasoning.
Roast at 380 degrees for about 40 minutes 
or until cooked to you preference. 


Over Easy Spinach

I buy my spinach in giant tubs, 
so sometimes I am racing the clock trying 
to eat it all before it goes bad! 
This recipe was created in an effort to try
to use up some spinach on our 
"Breakfast for dinner" night!

Saute spinach in a spritz of olive oil
with salt and pepper. 
Push to side of pan and add three eggs.
Cook until firm on bottom and flip onto Spinach.
Cook until no longer runny.
Add shredded cheese and enjoy!!
